Easy Bolognaise: (Serves 4)

1 onion
1 garlic clove
1 block of extra lean beef mince
1 stick of celery
2 carrots
2 sweet peppers (red, yellow)
3 baby marrows sliced
½ punnet chopped mushrooms
1 Tbs tomato paste
¼ cup of red wine
1 Can of tomatoes (optional)
1 tin of lentils
Seasoning: paprika, beef stock, fresh parsley, parmesan cheese, lamb rub (woolworths)

Saute onion with olive oil add smoked paprika if desired.  Add mince and season with herbs and beef stock powder.  Add chopped mushrooms and baby marrows and saute for 5 minutes. Add lamb rub or beef stock and red wine. In a blender, blend the celery, carrots and peppers until just finely chopped (add a splash of cold water to help the blending process).  Once mince is browned and fragrant, add celery mixture and cook on high heat for 5 minutes.  Add can of tomatoes and tomato paste and beans/lentils.  Add 2 cups of boiling water or enough to cover the mince mixture.  Lower heat to a simmer and cook for 20-30 minutes or until desired consistency.  Stir in 1 handful of fresh parsley and serve with grated parmesan cheese over the top.

Serve with pasta or rice and add a green salad or steamed veggies.
